Kathy's Cauliflower Stroganoff


Kathy's Cauliflower Stroganoff   2sp per serving
Prep time: 25 min
Cook time: 30 min
serves: 8
used WW recipe builder for points calculations
2 T Kroger Worcestershire Sauce (0sp)
10 1/2 oz can Condensed Cream of Mushroom soup (8sp)
2 pounds Extra Lean ground Turkey Breast (0sp)
8 C cooked riced Cauliflower (0sp)
16oz fresh mushrooms, sliced(0sp)
1 1/2 C raw onion, chopped (0sp)
2 T Better Than Bullion Beef Base (0sp)
1 C 1% Milk (4sp)
4 T sour cream (6sp)
pinch of cayenne -I used 1/8 tsp
salt ( I used 1 tsp)
pepper ( I used 1/4 tsp)
Saute ground turkey;  add onions, mushrooms, beef base, Worcestershire sauce and cook till combined and onions soft. Add cauliflower and stir. Cover, cook over medium heat, stir frequently. Add salt and pepper and cayenne to taste.
in medium bowl combine soup, milk and sour cream. Add to cauliflower mixture. Cook over low heat until heated through.
Approx. 1 1/2 C per serving. Serve as is or over vegetables or pasta or rice.

WW GF 3 point Bagels


3 point mini bagels GF

 Preheat oven to 450゚
 1/2 C Jules gluten free flour 72gm
1/2 C gf cornmeal
1 tsp salt
1 tsp baking powder
1 cup nonfat Greek yogurt
1/4 C Kraft nonfat shredded cheddar cheese
pinch cayenne
Everything but the bagel seasoning

sift dry ingredients
add Greek yogurt
mix until incorporated
turn on to counter
knead 1 to 2 minutes
shape into a log
divide into 4
shape into 4 logs, curl into bagel shape,  connect ends
(May need to moisten ends with water)

 When ready to top :
moisten the tops with water
 invert them into a bowl that has the bagel seasoning
place them on a  Baking sheet lined with parchment paper and bake for 20 minutes
Cool on sheet x 5 min,then cool on rack x 20 minutes.
